ANÁLISE SWOT DO SETOR DE PROTEÍNAS ALTERNATIVAS PLANT-BASED: UMA REVISÃO SISTEMÁTICA

Resumen

O objetivo deste trabalho foi identificar forças, fraquezas, ameaças e oportunidades sobre o setor de proteínas alternativas plant-based, que são alimentos de origem vegetal que apresentam características sensoriais similares aos produtos derivados de animais, como carnes e leites. Foi realizada uma revisão sistemática, que analisou artigos científicos e identificou forças e fraquezas internas e externas desse campo. Os desafios e as potencialidades devem ser analisados considerando a cadeia de produção, podendo representar uma oportunidade ou ameaça dependendo do elo considerado. São demonstradas inter-relações entre os fatores positivos e negativos levantados na pesquisa. Destaca-se, ainda, que os estudos nesse campo são multidisciplinares, abrangendo áreas como nutrição, meio ambiente e economia. A utilização da matriz SWOT permitiu identificar os fatores negativos, como preço relativamente mais alto, necessidade de processamento de ingredientes e de rótulos clean-label e neofobia alimentar. Já as forças identificadas são combinação de diferentes fontes vegetais de proteínas, maior aceitação e consumo do que outras proteínas alternativas, sustentabilidade ambiental e as motivações para consumo ligadas à saúde, ao bem-estar animal e à ética. Os resultados apresentam implicações relevantes para as organizações envolvidas na cadeia de suprimentos e pesquisadores, ao identificar pontos de melhoria e oportunidades do setor.
